Tic tac toe variants that are actually worth playing
Standard tic tac toe is solved and always ends in a draw between competent players, because 9 squares and 8 winning lines leave no room for an advantage. Variants fix this in three ways — letting pieces move after placement, as in the three-piece sliding version; enlarging the board, as in Gomoku and Ultimate; or inverting the goal, as in misère where three in a row loses.
Standard tic tac toe stops being interesting the moment both players learn it. It is a solved game — correct play from both sides always draws, every time.
The board is simply too small: 9 squares, 8 winning lines, and only 765 meaningfully distinct positions. There is nowhere for an advantage to hide.
Every variant below fixes that in one of three ways: let the pieces move, make the board bigger, or change what winning means.
Make the pieces move
The most elegant fix, because it keeps the familiar 3×3 board.
The three-piece sliding game
Each player has only three marks. Once all six are on the board, play continues by moving a mark to an empty square, turn by turn, until someone makes three in a row.
This changes the game completely. There is no draw-by-full-board, because the board never fills — play simply continues. Positional thinking replaces the memorised opening lines, because a square you hold now is one you may have to give up later.

Make the board bigger
Gomoku — five in a row
Played on a 15×15 or 19×19 grid, with the goal of five in a row. The extra space makes it a genuinely deep strategy game with serious competitive play behind it.
Far less accessible than tic tac toe, and no longer a two-minute game.
Ultimate tic tac toe
Nine tic tac toe boards arranged in a 3×3 grid. Winning a small board claims that square on the big one, and — the crucial rule — your move dictates which board your opponent must play in next.
That single constraint turns a trivial game into something genuinely hard. It is the most interesting variant to play with someone who thinks tic tac toe is beneath them.

One player takes odd numbers, the other even, and a line wins when three entries sum to 15. Same grid, entirely different thinking.

Misère — three in a row loses
Identical rules, inverted goal: making three in a row means you lose. Surprisingly disorienting for anyone with the standard strategy memorised, because every trained instinct is now wrong.
Wild tic tac toe
Either player may place either an X or an O on any turn. Whoever completes any three in a row wins, with either mark. The extra choice each turn expands the game far more than it sounds like it should.

Why variants matter more than better opponents
A common assumption is that tic tac toe gets interesting against a stronger opponent. It does not. A perfect opponent makes it less interesting, because a perfect opponent simply never loses — which is why Google's own tic tac toe has an "Impossible" mode that can only ever be drawn.
Depth has to come from the rules, not the opposition. That is the whole reason variants exist.
